Ingredients

Scale

Protein

  • 2 cups shredded cooked chicken breast or rotisserie chicken

Dairy

  • 1 cup sour cream
  • 2 cups cheese blend (cheddar and Monterey Jack), shredded

Sauces & Condiments

  • 1 cup enchilada sauce (divided)

Base & Layers

  • 810 flour tortillas

Vegetables & Aromatics

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Fresh cilantro, chopped (for garnish)

Spices

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt (adjust to taste)

Instructions

  1. Prepare the Chicken Filling: In a large mixing bowl, combine the shredded cooked chicken with sautéed diced onion and minced garlic. Stir in the sour cream and half of the enchilada sauce. Season the mixture with cumin, chili powder, and salt, mixing thoroughly until everything is evenly coated.
  2. Assemble the Layers: Grease a casserole dish and spread a thin layer of enchilada sauce on the bottom. Place a layer of flour tortillas over the sauce, followed by a generous scoop of the sour cream chicken mixture. Sprinkle a handful of the cheese blend on top. Repeat these layers—tortillas, chicken mixture, and cheese—until all ingredients are used, finishing with a top layer of cheese.
  3. Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the assembled casserole for 25-30 minutes until the cheese is bubbly and slightly golden. Remove from the oven and let it rest for 5-10 minutes before slicing to allow the layers to set for easier serving.

Notes

  • Warm tortillas before layering to make them more pliable and prevent tearing.
  • Shred chicken while still warm for juicier texture and better flavor absorption.
  • Allow the casserole to rest after baking to help layers meld and improve sliceability.
  • For extra melty cheese, sprinkle additional cheese on top halfway through baking.
  • Customize the enchilada sauce by mixing mild and spicy varieties or using homemade sauce for fresh flavor.
