Ingredients

Scale

Filling Ingredients

  • 1 cup cooked and shredded chicken breast
  • 1 tablespoon Southwest seasoning blend (chili powder, cumin, garlic powder, smoked paprika)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 1/2 cup black beans, drained
  • 1/2 cup shredded cheese (cheddar, pepper jack, or Mexican blend)
  • 2 tablespoons fresh cilantro, chopped

Assembly and Cooking

  • 810 egg roll wrappers
  • Olive oil or cooking spray (for frying or baking)
  • Water (for sealing wrappers)

Optional Add-ins and Variations

  • Jalapeños or chipotle peppers (for extra heat)
  • Sautéed mushrooms or sweet potatoes (for vegetarian version)
  • Your favorite salsa or pico de gallo (for mixing into filling)

Instructions

  1. Prepare the Chicken Filling: Cook and shred the chicken breast, then season it with the Southwest seasoning blend. Sauté diced onions and bell peppers until softened. Combine the cooked chicken, sautéed veggies, black beans, shredded cheese, and fresh cilantro in a bowl, mixing well to create a flavorful filling.
  2. Assemble the Egg Rolls: Lay out egg roll wrappers on a clean, flat surface. Place about two tablespoons of the filling in the center of each wrapper. Fold the sides over the filling, then roll tightly from one edge to the other. Seal the edges with a small dab of water to prevent them from opening during cooking.
  3. Cook Until Golden: Heat oil to medium-high if frying, and fry the egg rolls for 3-5 minutes until golden brown and crispy. Alternatively, brush the egg rolls lightly with olive oil and bake at 400°F for 15-20 minutes until crisp and golden.
  4. Garnish and Serve: Let the cooked egg rolls cool slightly to preserve their crunch. Sprinkle with fresh cilantro and serve with your choice of dipping sauces such as creamy ranch, salsa, or avocado dip.

Notes

  • Dry the filling ingredients well to avoid soggy egg rolls.
  • Seal the wrappers tightly with water to keep filling inside during cooking.
  • Maintain oil temperature during frying for crispy, non-greasy egg rolls.
  • Baking is a healthier alternative that still delivers good crunch when egg rolls are brushed with oil.
  • Prepare the filling ahead of time and assemble just before cooking to save time.
