Ingredients

Scale

Main Ingredients

  • 1 lb ground chicken
  • 1 cup fresh spinach, finely chopped (or thawed and drained frozen spinach)
  • 2 tablespoons basil pesto, plus extra for spreading
  • 4 slices mozzarella cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs (regular or gluten-free)
  • 1 large egg
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 4 burger buns (your choice, gluten-free if needed)

Instructions

  1. Prepare the Spinach: Start by finely chopping fresh spinach leaves. If using frozen spinach, thaw thoroughly and squeeze out any excess moisture to prevent sogginess in the patties.
  2. Combine Ingredients: In a large bowl, mix the ground chicken, chopped spinach, minced garlic, finely chopped onion, breadcrumbs, egg, salt, pepper, and 2 tablespoons of basil pesto. Stir gently until just combined to keep the mixture tender.
  3. Form the Patties: Shape the mixture into 4 evenly sized patties, about 4 to 5 inches in diameter and ¾ inch thick. Press a small indentation into the center of each patty to ensure even cooking and prevent puffing.
  4. Cook the Burgers: Heat olive oil in a skillet over medium heat. Cook the patties for 5 to 6 minutes on one side until golden brown. Flip the patties and place a slice of mozzarella cheese on top of each. Cover with a lid for a few minutes to allow the cheese to melt completely.
  5. Toast the Buns and Assemble: While the cheese melts, toast burger buns lightly in the oven or on a grill for added texture. Spread a thin layer of pesto on each bun half, then assemble burgers with the patty. Add your favorite fresh toppings such as tomato slices, basil leaves, and lettuce before serving.

Notes

  • Use fresh spinach and high-quality mozzarella for best flavor and texture.
  • Do not overmix the burger mixture to keep patties tender.
  • Indent the center of the patties to prevent swelling during cooking.
  • Cook burgers over medium heat to ensure thorough cooking without burning.
  • Let burgers rest a few minutes after cooking to retain juices and flavor.
