Ingredients

Vegetables and Bread

  • Fresh Spinach: 1 cup, tender washed leaves
  • Sweet Corn Kernels: 1/2 cup, fresh or frozen
  • Soft Bread Slices: 4 slices (white, whole wheat, or multigrain)
  • Onion: 1 small, finely chopped
  • Garlic: 2 cloves, finely chopped

Fats and Oils

  • Butter or Olive Oil: 1 tablespoon (for sautéing and spreading on bread)

Spices and Herbs

  • Cumin Powder: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Chili Powder: pinch (adjust to taste)
  • Salt: to taste

Optional Ingredients

  • Cheese (Cheddar or Mozzarella): 1/4 cup grated (optional)

Instructions

  1. Prepare the Filling: Heat butter or olive oil in a pan over medium heat. Add finely chopped onions and garlic, sautéing until golden and fragrant. Add spinach leaves and cook until wilted. Stir in sweet corn kernels, then season with cumin, black pepper, salt, and chili powder. Cook the mixture for 3-4 minutes until heated through and slightly thickened.
  2. Cool the Mixture: Transfer the filling to a bowl and allow it to cool slightly to prevent the bread from becoming soggy during assembly.
  3. Assemble the Sandwich: Spread a light layer of butter on one side of each bread slice. Spoon an even amount of filling onto one slice (buttered side up). Add cheese if using. Top with the other slice, buttered side down, to form a sandwich.
  4. Grill the Sandwich: Place the sandwich on a hot griddle or non-stick pan. Cook on medium heat for 2-3 minutes per side until the bread is golden brown and crisp, and the cheese (if added) melts. Press gently with a spatula for even grilling.
  5. Serve Hot: Remove the sandwich from the pan and let it rest for a minute. Cut diagonally and serve immediately to enjoy the crispy bread and flavorful filling.

Notes

  • Use fresh spinach and sweet corn for best texture and flavor.
  • Avoid overcooking the filling to prevent soggy bread.
  • Choose thicker bread slices for sturdiness.
  • Spread butter evenly for a golden crispy exterior.
  • Grill on medium-low heat to warm filling without burning the bread.
  • Optionally, add chopped nuts or seeds for extra crunch.
