Filling Ingredients
- 2 cups fresh spinach, washed and chopped
- 1/2 cup crumbled feta cheese
- 1 small onion, finely chopped
- 1–2 garlic cloves, minced
- 1 teaspoon lemon zest
- Salt, to taste
- Black pepper, to taste
Pastry
- 6–8 sheets phyllo pastry or 1 sheet puff pastry
- Olive oil or melted butter, for brushing
- 1 egg, beaten (for egg wash, optional)
- Prepare the filling: Sauté finely chopped onion and garlic in a tablespoon of olive oil over medium heat until softened and fragrant. Add the chopped fresh spinach and cook until wilted. Remove from heat, allow to cool slightly, then transfer to a bowl. Stir in crumbled feta cheese, lemon zest, salt, and pepper until well combined.
- Prepare the pastry: Lay out phyllo or puff pastry sheets on a clean surface. If using phyllo, brush each sheet lightly with olive oil or melted butter and stack 2 to 3 sheets together to add strength. Cut pastry into squares approximately 4 to 5 inches wide.
- Assemble the parcels: Place a generous spoonful of the spinach and feta filling in the center of each pastry square. Fold the corners towards the center, pinching edges firmly to seal and prevent leakage. Optionally, brush the exterior with beaten egg to achieve a golden, shiny crust after baking.
- Bake to perfection: Arrange the sealed parcels on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes or until parcels are golden and crisp. Allow them to cool for a few minutes before serving to set the filling and avoid burns.
Notes
- Dry the spinach thoroughly to prevent soggy parcels by squeezing out all excess water before mixing.
- Use fresh spinach and high-quality feta cheese for the best flavor.
- Avoid overfilling the parcels to ensure easy sealing and prevent leaking during baking.
- If using phyllo pastry, brush each sheet with oil or butter to achieve a crisp, golden finish.
- Let parcels cool slightly after baking to allow the filling to set properly.
