Instructions

  1. Prepare the Filling: Wash and chop the fresh spinach. Sauté it in 1 tablespoon of olive oil with minced garlic over medium heat until just wilted. Remove from heat and let cool. Once cooled, combine the spinach mixture with the cream cheese and shredded mozzarella or Parmesan. Season with salt, pepper, and optional herbs to taste.
  2. Prepare the Chicken: Using a sharp knife, carefully slice a horizontal pocket into each chicken breast, taking care not to cut through the sides. Lightly season both sides of the chicken breasts with salt and pepper.
  3. Stuff the Chicken Breasts: Spoon the prepared spinach and cheese mixture evenly into each chicken pocket. Press the edges slightly to seal the filling inside. Optionally, use toothpicks to secure the chicken to prevent filling leakage during cooking.
  4. Cook the Chicken: Preheat the oven to 375°F (190°C). Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown. Then transfer the skillet to the preheated oven and bake for about 20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
