  • Flour or corn tortillas, warmed
  • Optional toppings: chopped fresh cilantro, sliced avocado, diced tomatoes, sour cream, shredded cheddar or crumbled queso fresco, sliced jalapeños

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together olive oil, fresh lime juice, minced garlic, chili powder, cumin, salt, and pepper to create a flavorful marinade that tenderizes the steak.
  2. Marinate the Steak: Place the thinly sliced flank steak in a shallow dish or resealable bag. Pour the marinade over the steak, ensuring all pieces are coated. Let it marinate for at least 15 minutes or up to 1 hour in the refrigerator.
  3. Slice Your Veggies: While the steak marinates, thinly slice the red, green, and yellow bell peppers and the onion into uniform strips for even cooking and great texture.
  4. Cook the Steak: Heat a large skillet or cast iron pan over medium-high heat. Add the marinated steak strips in a single layer. Cook for about 3-4 minutes per side until browned and cooked to your preferred doneness. Remove the steak from the pan and set aside to rest.
