Instructions

  1. Prepare the sauce: Combine 1 tablespoon sesame oil, soy sauce, honey or brown sugar, minced garlic, minced ginger, and rice vinegar in a bowl. Stir well until the honey or sugar dissolves and the sauce is balanced in flavor.
  2. Cook the chicken: Heat a skillet over medium-high heat and add the remaining tablespoon of sesame oil. Add the chicken thighs and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from heat.
  3. Toss the noodles: Prepare the noodles according to package instructions until al dente. Drain and rinse briefly under cold water to stop cooking and prevent sticking.
  4. Combine chicken and sauce: Slice the cooked chicken into strips and return to the skillet. Pour the prepared sauce over the chicken and warm over medium heat, stirring occasionally. Add the cornstarch slurry if using, and cook until the sauce thickens and coats the chicken evenly.
  5. Assemble the bowl: Divide the noodles into serving bowls, top with the sticky sesame chicken, and add sautéed or raw vegetables if desired. Finish with a generous sprinkle of toasted sesame seeds and sliced green onions, plus optional cilantro or crushed peanuts.
