Instructions

  2. Marinate the Beef: In a bowl, combine the sliced beef with 1 tablespoon soy sauce, a splash (about 1 tablespoon) of oyster sauce, and 1 teaspoon sugar. Let it marinate for at least 10 minutes to develop flavor.
  3. Stir-fry the Beef: Heat 2 tablespoons of vegetable oil over high heat in a wok or large skillet. Add the marinated beef in a single layer and cook quickly until just browned, about 2–3 minutes. Remove the beef and set aside to avoid overcooking.
  4. Aromatics and Vegetables: In the same pan, add a little more oil if needed. Sauté the minced garlic and ginger until fragrant. Add the chosen vegetables (such as bok choy, bean sprouts, or scallions) and stir-fry briefly to keep them crisp.
  5. Add the Noodles and Sauce: Return the beef to the pan along with the softened flat rice noodles. Pour in soy sauce, oyster sauce, and a splash (about 2 tablespoons) of water or broth to loosen the mix. Toss gently but thoroughly until the noodles absorb the flavors and everything is heated through.
  6. Finish and Serve: Give the dish a final gentle toss. Adjust the seasoning with salt or chili flakes as desired. Serve immediately, garnished with fresh cilantro, scallions, or crushed peanuts if desired.
