Instructions

  1. Prepare the Filling: Sauté fresh spinach with minced garlic in olive oil over medium heat until just wilted. Remove from heat, let cool slightly, then mix with softened cream cheese and parmesan until well combined and creamy.
  2. Prepare the Chicken: Using a sharp knife, carefully slice each chicken breast horizontally to create a pocket without cutting all the way through.
  3. Stuff the Chicken: Evenly fill each chicken breast pocket with the spinach and cream cheese mixture. Press gently to secure the filling inside.
  4. Season and Cook: Season the outside of the stuffed chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat and cook the chicken breasts for 6-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F / 74°C).
  5. Rest and Serve: Let the chicken rest for a few minutes after cooking to lock in the juices. Slice crosswise or serve whole with your preferred side dishes and garnish with fresh parsley or chives if desired.
