Main Ingredients

  • 2 medium firm sweet potatoes, peeled and cut into bite-sized cubes
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Optional Spices and Add-ons

  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon cayenne pepper or red chili flakes (for spicy kick)
  • Fresh herbs such as rosemary, thyme, or parsley (for herb infusion)
  • Dollop of cream cheese or goat cheese (for stuffed bites)
  • Cooked bacon bits (for bacon lovers)

Instructions

  1. Prepare the Sweet Potatoes: Wash and peel 2 medium firm sweet potatoes. Cut into uniform, bite-sized cubes to ensure even cooking and perfect texture.
  2. Season and Oil: In a large bowl, toss the sweet potato cubes with 2 tablespoons olive oil, salt, black pepper, and any optional spices you prefer such as paprika or garlic powder. Ensure all pieces are evenly coated for maximum crispiness.
  3. Roast Sweet Potatoes: Spread the seasoned sweet potato cubes in a single layer on a baking sheet lined with parchment paper. Bake in a preheated oven at 425°F (220°C) for about 20 minutes, turning the cubes once halfway through, until they are golden brown and tender.
  4. Add the Cheese: Remove the baking sheet from the oven and evenly sprinkle 1 cup shredded cheddar or mozzarella cheese over the roasted sweet potatoes. Return to the oven for 3–5 minutes, or until the cheese melts and bubbles beautifully.
  5. Serve Warm: Take the sweet potato bites out of the oven and serve immediately for the best crispy-cheesy experience. Garnish with fresh herbs, green onions, smoked paprika, or a drizzle of sour cream if desired.

Notes

  • Cut sweet potatoes into uniform pieces to ensure even roasting.
  • Roast at a high temperature (425°F/220°C) for crispy outsides and tender insides.
  • Use sharp cheddar or flavorful cheese for a richer taste and better melt.
  • Do not overcrowd the baking sheet to avoid steaming; spread in a single layer.
  • Add fresh herbs after baking to maintain their vibrant flavor and color.
  • Store leftovers in an airtight container refrigerated for up to 3 days.
  • Freeze baked bites flat on a sheet, then transfer to freezer bags; good for up to 2 months.
  • Reheat in an oven at 375°F (190°C) for 8–10 minutes to restore crispiness and melt cheese.
