Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash and halve the sweet potatoes lengthwise. Poke the flesh with a fork to allow steam to escape, brush the cut sides lightly with olive oil, and season with salt and pepper. Place cut-side down on a parchment-lined baking sheet and roast for 25-30 minutes until tender and slightly caramelized.
  2. Cook the Bacon: While the sweet potatoes roast, cook bacon slices in a skillet over medium heat until crispy but not burnt. Drain on paper towels, then chop or crumble into bite-sized pieces.
  3. Scoop and Prepare the Boats: After roasting, carefully scoop out some flesh from the center of each sweet potato half, leaving a ¼-inch border to maintain the boat shape. Place the scooped flesh into a bowl.
  4. Assemble the Sweet Potato Boats: Lower the oven temperature to 375°F (190°C). Mix the scooped sweet potato flesh with the crumbled bacon and season as desired. Return this mixture into the sweet potato cavities, creating a small well in the center for the egg.
  5. Add the Egg and Bake: Carefully crack one egg into each sweet potato boat. Place the boats back into the oven and bake for 12-15 minutes until egg whites are set but yolks remain runny, or longer for firmer yolks.
