  • 3 tablespoons extra virgin olive oil

  • Freshly grated Parmesan cheese (optional, to serve)

Instructions

  1. Prepare the Ingredients: Finely chop the fresh tomatoes and tear the basil leaves into bite-sized pieces. Mince the garlic cloves to release their aromatic oils. Set all aside for easy access during cooking.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Before draining, reserve one cup of pasta water to adjust the sauce’s consistency later.
  3. Sauté Garlic and Tomatoes: Heat extra virgin olive oil in a large skillet over medium heat. Add the minced garlic and sauté gently for about 1 minute until fragrant. Add the chopped tomatoes and cook for 5-7 minutes until they start breaking down and releasing their juices.
  4. Combine Pasta and Sauce: Add the drained pasta to the skillet with the tomatoes. Toss thoroughly to combine. Pour in a splash of the reserved pasta water to create a silky sauce that coats every strand or bite of pasta.
  5. Add Basil and Season: Remove the skillet from heat. Fold in the fresh basil leaves and season with salt and freshly ground black pepper to taste. Sprinkle with freshly grated Parmesan cheese if desired. Serve immediately for optimal flavor and texture.
