Instructions

  1. Prepare the Filling: Melt butter in a large skillet over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly, to form a roux. Gradually add chicken or turkey broth and milk, stirring continuously until mixture thickens to a gravy-like consistency. Add cooked turkey and mixed vegetables. Season with salt, pepper, thyme, and rosemary. Stir to combine and heat through.
  2. Preheat the Oven: Set the oven to 400°F (200°C) to ensure even baking and a golden, crisp crust while keeping the filling bubbly.
  3. Assemble the Pie: Transfer the thickened filling into a baking dish. Lay the puff pastry or pie crust evenly over the top, trimming excess dough and pressing the edges to seal. Cut a few slits in the crust to allow steam to escape during baking.
