  • 1 teaspoon salt

Cheese Filling

  • 100g feta cheese, crumbled
  • 100g mozzarella cheese, shredded
  • 100g kasseri or Turkish kasar cheese, crumbled

  • 1 egg, beaten (for brushing the crust)

Instructions

  1. Prepare the Dough: Combine warm water, yeast, and sugar in a bowl and let it sit until frothy, about 5-10 minutes. Mix in flour, salt, and olive oil to form a soft dough, then knead until smooth and elastic. Cover the dough and let it rise for an hour until doubled in size.
  2. Prepare the Cheese Mixture: In a bowl, crumble the feta and kasseri cheese and shred the mozzarella cheese. Mix thoroughly to create a balanced, creamy cheese filling with a hint of tang and meltiness.
  3. Shape the Pide: Divide the dough into portions and roll each into an oval shape on a floured surface. Spread the cheese mixture evenly on top, leaving room around the edges for folding.
  4. Fold and Seal: Fold the edges inward and pinch the ends to form the traditional boat shape. Brush the crust edges with beaten egg to give the pide a golden finish once baked.
  5. Bake the Pide: Preheat your oven to 220°C (425°F). Bake the pide on a baking sheet or stone for 15-20 minutes, or until the crust is crispy and the cheese is bubbling and slightly golden.
