Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add finely chopped onion, garlic, carrots, and celery. Cook until softened and fragrant, about 5-7 minutes, to build the soup’s base flavor.
  2. Add Potatoes and Herbs: Add diced potatoes along with fresh rosemary and thyme sprigs to the pot. Stir well to release the herbs’ aroma as the potatoes begin to soften.
  3. Pour in Broth and Beans: Pour in the vegetable broth followed by the drained cannellini beans. Bring to a gentle simmer and cook until the potatoes are tender, approximately 15-20 minutes.
  4. Stir in Greens: Add chopped kale or spinach once the potatoes are cooked through. Let the greens wilt in the warm broth for a few minutes to brighten the flavor.
  5. Season and Serve: Remove the herb sprigs and season the soup generously with salt and pepper. Serve hot with crusty bread or preferred garnishes.
