  • 1 teaspoon vanilla extract

Caramel Layer

  • 1012 caramel candies (about 200g) or equivalent homemade caramel
  • 2 tablespoons heavy cream or butter (for melting caramel)

Chocolate Topping

  • 1 1/2 cups (270g) chocolate chips or chopped chocolate bars (milk, dark, or white chocolate)

Instructions

  1. Prepare the Cookie Base: Cream together softened butter, white sugar, and brown sugar until light and fluffy. Gradually mix in the flour, salt, and vanilla extract until a smooth dough forms. Press the dough evenly into a parchment-lined baking pan to form a firm, even layer. Bake at 350°F (175°C) for 18-22 minutes or until golden and slightly firm.
  2. Add the Caramel Layer: Remove the cookie base from the oven and let it cool for 10-15 minutes. Melt caramel candies with cream or butter over low heat until smooth. Spread the warm caramel evenly over the cookie base. Refrigerate for 20-30 minutes until the caramel is set and firm.
  3. Top with Chocolate: Melt chocolate chips or bars using a double boiler or microwave in short bursts, stirring to ensure smooth melting. Pour and spread the melted chocolate evenly over the chilled caramel layer. Return the pan to the refrigerator and chill until the chocolate is completely hardened.
  4. Slice and Serve: Carefully lift the layered bars from the pan using the parchment paper. Using a sharp knife, slice into bars or squares. Serve immediately or store as desired.
