Featuring crisp apples caramelized with butter and brown sugar, layered beneath rich Brie cheese, all encased in golden, flaky puff pastry, these tarts are ideal for brunch, appetizers, or sweet-savory snacks. The upside-down baking technique creates a stunning caramelized apple topping that is both comforting and sophisticated.

Ingredients

Scale

Fruit & Cheese

  • 3 large crisp apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 7 oz (200g) Brie cheese, rind on, sliced thinly

Pastry & Sweeteners

  • 1 sheet frozen puff pastry, thawed (use gluten-free puff pastry for GF option)
  • 2 tbsp brown sugar

Spices & Acid

  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp fresh lemon juice

Other

  • 2 tbsp unsalted butter

Instructions

  1. Prepare the Apples: Core, peel, and slice the apples into thin, even slices. Toss them gently with lemon juice, cinnamon, nutmeg, and brown sugar to ensure even coating, prevent browning, and add warm spice flavor.
  2. Caramelize the Apples: Melt butter in a pan over medium heat. Add the apple slices and cook for about 5-7 minutes, stirring occasionally, until the apples soften and caramelize slightly.
  3. Arrange Apples in Pan: Evenly spread the caramelized apples in an oven-safe baking dish or skillet, laying the slices closely to form a decorative surface for when flipped.
  4. Add Brie Cheese: Layer the thin slices of Brie evenly over the apples, allowing the cheese to melt into the fruit during baking for a creamy texture.
  5. Top with Puff Pastry: Roll out the puff pastry to cover the Brie and apple layer completely. Tuck the edges down around the sides of the pan and prick the pastry lightly with a fork to vent steam.
  6. Bake Until Golden: Bake in a preheated oven at 400°F (200°C) for 20-25 minutes until the puff pastry is puffed and golden brown.
  7. Flip and Serve: Remove the tart from the oven and let it cool for 5 minutes. Carefully invert the tart onto a serving plate to reveal the caramelized apple and Brie topping. Serve warm.

Notes

  • Choose firm apples like Granny Smith or Honeycrisp for best texture.
  • Keep puff pastry cold before baking to achieve maximum flakiness.
  • Use rind-on Brie for added flavor and structure.
  • Do not overcrowd apples when arranging to allow even caramelization.
  • Allow the tart to rest before flipping to avoid breakage.
