Ingredients

Scale

Main Ingredients

  • 1 ½ cups cooked brown rice
  • 1 can (15 oz) white beans (cannellini or great northern), rinsed and drained
  • ½ cup fresh basil pesto (homemade or store-bought)
  • 1 cup cherry tomatoes, halved
  • ½ cup grated Parmesan cheese
  • 2 garlic cloves, finely minced
  • 1 tablespoon olive oil
  • 2 cups baby spinach or kale
  • Salt and pepper, to taste

Instructions

  1. Prepare the Brown Rice and Beans: Cook the brown rice until tender but still slightly firm, then drain and set aside. Rinse the canned white beans thoroughly to remove excess sodium and drain well.
  2. Sauté Aromatics and Greens: Heat olive oil in a skillet over medium heat. Gently sauté the minced garlic until fragrant, then add the baby spinach or kale and cook until wilted, stirring occasionally to keep the greens tender and vibrant.
  3. Combine Ingredients: In a large mixing bowl, combine the cooked brown rice, white beans, sautéed greens and garlic, cherry tomatoes, and pesto. Stir gently to coat everything evenly and distribute the tomatoes for bursts of color.
  4. Transfer and Bake: Pour the mixture into a lightly greased baking dish. Sprinkle grated Parmesan evenly on top. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, until the cheese is golden and the bake is heated through.
  5. Rest and Serve: Let the bake cool for a few minutes before serving to allow the flavors to meld and make it easier to slice or scoop portions.

Notes

  • Use fresh pesto for the best flavor, though quality store-bought pesto works well.
  • Don’t overcook the brown rice to maintain a slightly firm texture after baking.
  • Drain the beans well to avoid excess moisture and a soggy bake.
  • Mix thoroughly to ensure every grain and bean is evenly coated with pesto.
  • Use a non-stick or well-greased baking dish for easy serving and cleanup.
