Ingredients

Scale

Salmon and Coating

  • 1 lb fresh salmon fillet, cut into 1 to 1.5-inch cubes
  • 1 cup panko breadcrumbs
  • 1/2 tsp garlic powder (for coating)
  • Salt and pepper, to taste
  • Oil for frying or baking (neutral oil with high smoke point)

Bang Bang Sauce

  • 1/4 cup mayonnaise
  • 2 tbsp sriracha or hot sauce (adjust to taste)
  • 1 tbsp honey or sweet chili sauce
  • 1 tsp lime juice
  • 1/4 tsp garlic powder

Instructions

  1. Prepare the Salmon: Cut fresh salmon fillet into bite-sized cubes about 1 to 1.5 inches. Season lightly with salt, pepper, and garlic powder to enhance natural flavors before coating.
  2. Create the Coating: In a shallow dish, combine panko breadcrumbs with garlic powder. This mixture will give your salmon bites an irresistible crunch once cooked.
  3. Coat the Salmon: Lightly brush or spray the salmon cubes with a little oil or beaten egg to help the breadcrumbs adhere. Then roll the salmon pieces evenly in the panko mixture ensuring full coverage.
  4. Cook the Salmon Bites: For crispy results, pan-fry the coated salmon bites in hot oil over medium heat until golden brown and cooked through, about 3 minutes per side. Alternatively, bake at 400°F (200°C) on a greased baking sheet for 12-15 minutes, flipping halfway through cooking.
  5. Prepare the Bang Bang Sauce: Whisk together mayonnaise, sriracha, honey, lime juice, and garlic powder in a small bowl. Adjust spice level by adding more sriracha or more honey for sweetness if desired.
  6. Combine and Serve: Once cooked, toss the salmon bites gently in the bang bang sauce or drizzle it on top to coat. Serve immediately for the best crunch and flavor.

Notes

  • Use fresh, high-quality salmon for tender, flaky bites.
  • Fry in small batches to avoid overcrowding and steaming.
  • If the sauce is too thick, thin it with a teaspoon of water or lime juice.
  • Slightly chilled salmon cubes coat better and retain shape during cooking.
  • For extra crunch, double coat by dipping bites twice in sauce and breadcrumbs before cooking.
