Ingredients

Scale

Brownie Batter

  • 1/2 cup (115g) unsalted butter, melted
  • 1/3 cup (35g) cocoa powder
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (110g) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (90g) chocolate chips

Cookie Dough

  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (110g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (155g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (135g) chocolate chips

Instructions

  1. Prepare the Brownie Batter: Start by melting the butter and mixing it with cocoa powder, granulated sugar, and brown sugar. Add in eggs and vanilla extract, followed by flour, salt, and a pinch of baking powder. Stir in chocolate chips last. This batter should be richly chocolatey and smooth, forming the base of your Brookies.
  2. Mix the Cookie Dough: Next, cream together softened butter, brown sugar, and granulated sugar until fluffy. Beat in the egg and vanilla extract, then whisk in flour, baking powder, and salt. Fold in chocolate chips, ensuring the dough is soft but firm enough to scoop.
  3. Layering the Batter: Grease or line your 9×9 inch baking pan. Pour the brownie batter evenly into the pan and smooth it out. Dollop spoonfuls of cookie dough over the brownie layer, pressing gently to cover the surface but letting it remain patchy for the true brookie effect.
  4. Baking: Bake at 350°F (175°C) for about 30 to 35 minutes until cookies turn golden and a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Let it cool to set before slicing.
  5. Serve and Enjoy: Once cooled, cut your Brookies into generous squares. Their fudgy brownie underlayer paired with the chewy cookie top will delight every bite.

Notes

  • Use room temperature butter and eggs for easier mixing and better texture.
  • Do not overmix the batter to avoid tough Brookies.
  • Spread the brownie batter evenly for uniform baking before adding cookie dough.
  • Check oven starting at 28 minutes to prevent overbaking.
  • Using high quality chocolate chips significantly improves flavor.
  • Store Brookies in an airtight container at room temperature for up to 3 days.
  • Freeze tightly wrapped Brookies for up to 2 months, thaw overnight before enjoying.
  • Reheat in the microwave for 10–15 seconds to regain fresh-baked softness.
