  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste

  • Juice of 1 lime (about 12 tbsp fresh lime juice)
  • 8 small flour or corn tortillas, warmed

Instructions

  1. Prepare the Chicken and Vegetables: Slice the chicken breasts into thin strips, similar in size to the bell peppers. Thinly slice the red, green, and yellow bell peppers and the onion to ensure even cooking.
  2. Mix the Fajita Seasoning: In a small bowl, combine chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss the chicken strips with half of this seasoning mix to evenly coat.
  3. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 5 to 7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.
  4. Sauté Vegetables: In the same skillet, add the remaining olive oil if needed. Add bell peppers and onions along with the remaining seasoning mix and cook for about 5 minutes until the vegetables are tender yet still slightly crisp.
  5. Combine and Finish: Return the cooked chicken to the skillet with the vegetables, add the minced garlic, and cook together for an additional 2 minutes to meld the flavors. Squeeze fresh lime juice over the mixture to add brightness.
  6. Warm Tortillas: Warm the tortillas in a dry skillet or microwave until soft and pliable for wrapping.
