Protein
- 1 lb boneless, skinless chicken breast
Vegetables
- 1 each red, green, and yellow bell pepper, sliced into thin strips
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
Seasonings & Oils
- 2 tbsp olive oil, divided
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
Other
- Juice of 1 lime (about 1–2 tbsp fresh lime juice)
- 8 small flour or corn tortillas, warmed
- Prepare the Chicken and Vegetables: Slice the chicken breasts into thin strips, similar in size to the bell peppers. Thinly slice the red, green, and yellow bell peppers and the onion to ensure even cooking.
- Mix the Fajita Seasoning: In a small bowl, combine chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss the chicken strips with half of this seasoning mix to evenly coat.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 5 to 7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.
- Sauté Vegetables: In the same skillet, add the remaining olive oil if needed. Add bell peppers and onions along with the remaining seasoning mix and cook for about 5 minutes until the vegetables are tender yet still slightly crisp.
- Combine and Finish: Return the cooked chicken to the skillet with the vegetables, add the minced garlic, and cook together for an additional 2 minutes to meld the flavors. Squeeze fresh lime juice over the mixture to add brightness.
- Warm Tortillas: Warm the tortillas in a dry skillet or microwave until soft and pliable for wrapping.
Notes
- Cut chicken and vegetables into uniform thickness for even cooking.
- Use medium-high heat to get a good sear without stewing the ingredients.
- Let cooked chicken rest for a few minutes to lock in juices.
- Fresh lime juice adds essential brightness and should never be skipped.
- Toast tortillas briefly in a skillet to enhance texture and flavor.
