Instructions

  1. Prepare the Ingredients: Peel and devein the shrimp. Finely chop the garlic, ginger, green onions, peas, and carrots. Break apart the cold, cooked rice to avoid clumps during frying.
  2. Cook the Eggs: Heat a wok or large skillet over medium-high heat, add a splash of vegetable oil, and scramble the eggs until just set. Remove from the pan and set aside.
  3. Sauté Aromatics and Seafood: In the same pan, add more vegetable oil, then sauté the garlic and ginger until fragrant. Add the shrimp and crab meat, cooking gently until the shrimp turn pink and crab is heated through.
