Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil or butter in a large skillet over medium-high heat. Once hot, add the chicken and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set aside to keep warm.
  2. Sauté the Aromatics and Mushrooms: In the same skillet, add a bit more oil if needed and toss in the chopped onions. Cook until translucent and soft, about 3 minutes. Add minced garlic and sauté for 30 seconds until fragrant. Then add sliced mushrooms, stirring occasionally, allowing them to brown and release their juices, about 5-7 minutes.
  3. Create the Cream Sauce: Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for a minute to reduce slightly. Next, stir in the heavy cream and fresh thyme or parsley, then season with salt and pepper. Let the sauce thicken gently over low heat for about 3-5 minutes.
  4. Combine and Finish Cooking: Return the cooked chicken breasts back to the skillet, spooning sauce over them to coat thoroughly. Allow the chicken to simmer in the creamy mushroom sauce for another 3-4 minutes to absorb all those flavors. Optionally, sprinkle grated Parmesan cheese on top before serving for extra richness.
