Instructions

  1. Prep and Sear the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Garlic and Sun-Dried Tomatoes: Reduce the skillet heat to medium. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the chopped sun-dried tomatoes and cook for 1-2 minutes to release their flavors.
  3. Create the Creamy Sauce: Pour in the heavy cream and stir to combine. Bring to a gentle simmer, then add the grated Parmesan cheese, stirring continuously until melted and smooth. Season with additional Italian seasoning, salt, and pepper to taste.
  4. Add Spinach and Return Chicken: Stir the fresh baby spinach into the sauce and cook until wilted, about 2 minutes. Return the cooked chicken breasts to the skillet, spoon sauce over them, and allow everything to meld together for a couple more minutes before serving.
