Ingredients

Scale

Mushrooms and Aromatics

  • 200g fresh button or cremini mushrooms, sliced
  • 3 garlic cloves, peeled and finely minced
  • Optional: 1 teaspoon fresh ginger, minced

Noodles

  • 150g chow mein noodles

Vegetables

  • 1/2 cup bell peppers, thinly sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup bean sprouts
  • Optional: broccoli, snap peas, or bok choy (additional 1/2 cup)

Seasonings and Oils

  • 2 tablespoons soy sauce (use low-sodium or tamari for variations)
  • 1 tablespoon sesame oil
  • 2 green onions, chopped (for garnish and cooking)

Optional Additions

  • Chili flakes or fresh sliced chili (to taste, for spice)
  • Protein options: tofu, chicken, or shrimp (approx. 200g)

Instructions

  1. Prepare Ingredients: Clean and slice the mushrooms evenly. Peel and finely mince the garlic cloves. Chop vegetables such as bell peppers and carrots into thin strips to ensure quick cooking and retained crunch.
  2. Cook the Noodles: Boil chow mein noodles according to package instructions until just tender. Drain and rinse under cold water to stop cooking, then set aside to prevent sticking.
  3. Sauté Garlic and Mushrooms: Heat sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté until fragrant but not browned. Add mushrooms and cook until they release moisture and turn golden brown for intensified flavor.
  4. Add Vegetables and Noodles: Add prepared vegetables and stir-fry for 2-3 minutes until they soften slightly but remain crisp. Incorporate cooked noodles and gently toss to mix and coat evenly with the garlic mushroom mixture.
  5. Season and Finish: Pour soy sauce over the mixture and stir continuously to distribute flavor while warming through. Add optional fresh ginger, green onions, and a splash of sesame oil. Cook for another minute, then remove from heat.
  6. Serve: Plate immediately, garnish with chopped green onions or toasted sesame seeds, and enjoy warm.

Notes

  • Use fresh mushrooms for optimum flavor and texture.
  • Cook mushrooms in batches if needed to avoid overcrowding and ensure caramelization.
  • Prepare all ingredients ahead of time for quick stir-frying.
  • Rinse noodles after boiling to prevent sogginess and maintain texture.
  • Add soy sauce gradually to avoid over-salting.
  • For gluten-free version, substitute chow mein noodles with rice or gluten-free noodles.
  • Add protein such as tofu, chicken, or shrimp to increase meal heartiness.
