Instructions

  1. Prepare the Lamb Mixture: In a large bowl, combine the ground lamb with minced garlic, finely chopped red onion, chopped fresh mint and parsley, dried oregano, lemon zest, salt, and black pepper. Gently mix using your hands or a spoon until all ingredients are evenly incorporated, being careful not to overwork the meat to maintain tenderness.
  2. Shape the Patties: Divide the mixture into equal portions and shape each into a round, flat patty about ¾ inch thick. Create a small indentation in the center of each patty to prevent puffing up during cooking and ensure even grilling.
  3. Preheat the Grill or Skillet: Heat your grill or a heavy skillet over medium-high heat. Brush the surface with olive oil to prevent sticking, which is essential to develop a nice, slightly charred crust.
  4. Cook the Burgers: Place the patties on the hot grill or skillet and cook for about 4-5 minutes per side, depending on thickness and desired doneness. Flip only once to get a good sear and avoid pressing down on the patties to keep them juicy.
