Ingredients

Scale

For the Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil (for marinating and grilling)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp lemon juice (optional, for extra zing)
  • 1 garlic clove, minced (optional, to rub on chicken)

For the Green Goddess Sauce

  • 1 cup Greek yogurt
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh basil leaves
  • 2 tbsp fresh chives
  • 1 tbsp fresh tarragon leaves
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp anchovy paste (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Green Goddess Sauce: Blend Greek yogurt with fresh parsley, basil, chives, tarragon, garlic, lemon juice, olive oil, and anchovy paste if using. Season with salt and pepper. Blend until smooth and vibrant green. Chill the sauce to let flavors meld.
  2. Marinate the Chicken: Rub chicken breasts with olive oil, salt, and pepper. Optionally add lemon juice and minced garlic for extra flavor. Let the chicken rest for at least 15 minutes to absorb seasonings.
  3. Grill the Chicken: Preheat grill to medium-high heat. Place chicken breasts on grill and cook for 6-7 minutes per side or until internal temperature reaches 165°F (75°C), achieving nice grill marks.
  4. Serve with Green Goddess Sauce: Let grilled chicken rest for a few minutes before slicing. Drizzle or dollop the chilled Green Goddess sauce on top. Garnish with fresh herbs or lemon wedges if desired.

Notes

  • Take chicken out of the fridge 20 minutes before grilling for even cooking.
  • Let chicken rest after grilling to keep meat moist.
  • Use fresh herbs for the best vibrant sauce flavor; avoid dried herbs.
  • Resist moving chicken too much on grill to develop appealing grill marks.
  • Blend the sauce until silky smooth; add splash of water if needed for consistency.
