Mac and Cheese Filling
- 8 oz elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Salt and pepper, to taste
- Optional: 1/2 tsp garlic powder or smoked paprika
Assembly and Cooking
- 12–15 egg roll wrappers
- 1 egg, beaten with 1 tbsp water (egg wash)
- Vegetable oil, for frying
- Prepare the Mac and Cheese Filling: Cook elbow macaroni according to package instructions until al dente. In a medium saucepan over medium heat, melt butter, then stir in flour and cook for about 1 minute to form a roux. Gradually whisk in milk and cook until thickened. Remove from heat and stir in shredded cheddar and Monterey Jack cheese until melted and smooth. Season with salt, pepper, and optional spices. Fold in drained macaroni and allow the mixture to cool completely.
- Assemble the Egg Rolls: Lay one egg roll wrapper flat with a corner pointing toward you. Spoon about two tablespoons of cooled mac and cheese mixture onto the bottom third of the wrapper. Fold the bottom corner over the filling, tuck in the sides, and roll firmly but gently to seal. Use egg wash to seal the final corner. Repeat with remaining wrappers and filling.
- Fry the Egg Rolls: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Carefully add egg rolls in batches, avoiding overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Alternatively, bake in a preheated 425°F oven for 15-20 minutes, flipping halfway through.
- Serve and Enjoy: Serve Mac and Cheese Egg Rolls hot with your favorite dipping sauces such as ranch, marinara, or spicy mustard. Enjoy the perfect combination of creamy, cheesy filling and crunchy exterior.
Notes
- Cool filling completely before wrapping to avoid soggy wrappers or tearing.
- Seal edges thoroughly with egg wash to keep rolls intact during cooking.
- Maintain oil temperature at 350°F for even frying and crispy texture.
- Do not overfill wrappers to prevent bursting and ensure easy rolling.
- Experiment with different cheese blends to enhance flavor and meltiness.
