  • 1/3 cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh basil or thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Prepare the Salmon: Pat your salmon fillets dry and season both sides generously with salt and pepper. Heat olive oil in a skillet over medium-high heat, then sear the salmon skin-side down first until crisp and golden. Flip carefully and cook until mostly done but still tender inside. Remove from the pan and set aside.
  2. Make the Sauce: In the same skillet, add finely chopped garlic and shallots and sauté until translucent and fragrant. Stir in chopped sun-dried tomatoes and cook for a minute to release their flavor. Pour in heavy cream, gently stirring to combine, then add freshly grated parmesan cheese and your choice of herbs. Let the sauce simmer and thicken, stirring occasionally.
  3. Combine and Finish: Return the salmon to the skillet, spooning the creamy sauce over each fillet. Allow the salmon to finish cooking in the sauce for a couple of minutes, soaking up all those delicious flavors. Remove from heat and serve immediately for the best taste and texture.
