Tomato Salad

Tomato Salad

A vibrant, fresh, and simple tomato salad bursting with natural sweetness and acidity. This quick and healthy recipe uses ripe tomatoes, fresh herbs, olive oil, and a bright tangy dressing, perfect as a light meal or a versatile side dish with grilled meats, pasta, or on its own.

Ingredients

Main Ingredients

  • Ripe tomatoes (variety of colors and sizes) – 4 cups, chopped
  • Fresh herbs (basil, parsley, or mint) – 1/4 cup, finely chopped
  • Extra virgin olive oil – 3 tbsp
  • Lemon juice or vinegar (red wine or balsamic) – 1 tbsp
  • Salt – to taste
  • Black pepper – to taste

Optional Extras

  • Red onion – 1/4 cup, finely diced
  • Garlic – 1 clove, minced
  • Feta cheese – 1/4 cup, crumbled
  • Nuts (e.g., toasted pine nuts or walnuts) – 2 tbsp

Instructions

  1. Prepare the tomatoes: Wash and dry the tomatoes thoroughly. Slice or chop them into bite-sized pieces, mixing different varieties for color and taste contrast.
  2. Add the herbs: Finely chop fresh herbs and gently fold them into the tomatoes to distribute their fragrant flavors evenly throughout the salad.
  3. Dress the salad: Whisk together olive oil, lemon juice or vinegar, salt, and pepper. Pour this dressing over the tomatoes and herbs, tossing gently to coat everything without bruising the delicate ingredients.
  4. Add extras: If using extras like diced red onion, minced garlic, crumbled cheese, or nuts, sprinkle these on top last to maintain their texture and flavor integrity.
  5. Chill and serve: Allow the salad to rest for 10-15 minutes in the refrigerator to let the flavors meld beautifully before serving.

Notes

  • Choose ripe, in-season tomatoes for the best flavor.
  • Dress the salad gradually to avoid sogginess and overpowering acidity.
  • Use fresh herbs instead of dried for optimal aroma and taste.
  • Cut ingredients into uniform sizes for even flavor distribution.
  • Serve the salad immediately after chilling for the freshest taste.
